The Vegetarian Lunchbasket helps to keep meals healthy and quick

We have a largely vegetarian household and although I sometimes break down and enjoy some chicken every now and again, we mostly stay away from meat. The problem with this in a house with two kids is that a lot of vegetarian recipes assume you live a largely care-free life, and have hours to spend every day preparing food. That's just not the reality when children are involved, so the Vegetarian Lunchbasket is a great addition to our collection of cookbooks.

Not only are all the recipes in the book vegetarian, and there are over 200 of them, but they are all designed for people who don't have the luxury of spending a lot of time on food preparation. It's great to be able to look up recipes that you can prepare and have ready in a matter of minutes, and that also taste great. It makes being vegetarian a lot more enjoyable, and a lot less of a time-sink. Not to mention tasty.
